Chef Andrea Ribaldone, who put to good use his star-studded experience in high-end restaurants, decided to ally with Autogrill to try his hand at a company that was anything but simple: finding a way to prepare the perfect pasta dish in just over a minute of time from ordering, innovating the process and improving the result.
This is how Shakerami was born, one of the main innovations offered by the new bar format by Autogrill, Smart, currently present in the Brughiera Ovest service area of the A8, on the motorway link between Varese and Milan. The customer chooses the pasta format, the sauce with which to dress it, and after about a minute he receives his packaging, shaken - or shaken - to become an excellent first course.
"Everything comes from Spaghetto Milano - says Ribaldone - a special pasta seasoned with sauce obtained by blending the Milanese risotto that I had developed for a project in the context of Expo: it may seem strange, but this stratagem allows you to fully exploit the 'rice starch, which makes the sauce particularly creamy without adding butter, cream or fat.
It is a gimmick that makes the dish even healthier, and we have decided to apply it to Shakerami's proposals too ".
Here then - exploiting this intuition - pappardelle, fusilli and maccheroni can be served with three sauces made from as many recipes inspired by different Italian cities: we find the option Milan, based precisely on saffron and ossobuco ragout, Genoa, with a cream of basil, and Naples, where tomato and buffalo mozzarella triumph. "What keeps the quality of the products proposed with Shakerami unchanged is the absence of pasteurization: the sauces are reduced by temperature, as well as the pasta, which is pre-cooked and only rehydrated before being served. This allows us to serve it completely al dente, topped with a fresh, tasty, creamy and healthy sauce at the same time, "says Ribaldone.
In addition to Smart, the food giant also presents Autogrill Più, a concept of a restaurant proposed today in the service areas of Crocetta Sud (Alessandria) and Somaglia Est (Lodi), inspired by the city's food courts. In this case, the modular space is divided into two macro-sections: on the one hand the Comfort area, designed for customers with no particular hurry to get back on the road, where the self-service Hello, more and more in a healthy key , add sandwiches with angus, chicken or vegetables from Burger In, together with the 31 recipes based on cured meats, cheeses & co proposed by La Piadineria; on the other hand, the Fast area, where in addition to the pizzas, focaccias and the historic Camogli & Friends sandwiches, you can taste the healthy dishes of Mr. Good and the street food specialties inspired by the local traditions of Gusti di Strada, such as the Milanese cotolettine, the chicken wings, the mondeghili, the fried cod and the arancini.
